Earl Grey Tea Lemon cookies

Favorite cookie to gift to others, though I love it too

Ingredients

Cookie dough

• 100 g unsalted butter
• 50 g sugar
• 80 g light brown sugar
• 2 g salt
• 40 g beat egg (or one egg)
• 1 teaspoon vanilla extract
• 180 g all-purpose flour
• 2 g baking soda
• 3 g Earl Grey Tea from tea bags
• Zest of one lemon

Lemon icing

• 200 g powdered sugar
• 45 g lemon juice

Instructions

1. Preheat oven to 350F, set out egg and butter to warm to room temp.
2. Cream butter and sugar together in a medium sized bowl. Add egg and vanilla, and mix until combined.
3. Sift together dry ingredients into the creamed wet ingedients. Zest the lemon into the bowl, then stir to combine.
4. Divide into balls about 60 g each. Place on a cookie sheet.
5. Bake for 10-11 min.
6. (optional) Make lemon icing by combining powdered sugar and lemon juice
